The 825A, featuring a 10'' knife, is suitable for lower-volume needs of operations typically requiring two to three hours daily use and occasional cheese slicing. The 827A, with its 12'' knife and more powerful 1/3 HP motor, is the larger economy model that takes on greater amounts of meats, vegetables or fruits, and a user profile of anywhere from four to five hours daily. It can also handle moderate amounts of cheese. These models’ compact design makes them a good choice for operations with limited kitchen space.
